SCOBY stands for symbiotic culture of bacteria and yeast, and is the critical ingredient in brewing kombucha. To start your brew make sweet tea and let it cool to room temperature. Then add the sweet tea to your SCOBY and the starter tea. The SCOBY will eat the sugar from the tea and transform into your delicious home brew within 7-14 days (the longer you brew the less sweet the flavor). Enjoy your kombucha straight, or add fruit and other ingredients to start secondary brew and transform the kombucha into a fizzy, healthy soda replacement.
